Mediterranean Quinoa Salad

Protein-rich quinoa salad with fresh vegetables, herbs, and lemon vinaigrette.
Ingredients
- 300g quinoa, rinsed
- 600ml vegetable broth
- 2 cucumbers, diced
- 300g cherry tomatoes, halved
- 1 red onion, diced fine
- 200g feta cheese, crumbled
- 100g Kalamata olives, pitted
- 60g fresh parsley, chopped
- 30g fresh mint, chopped
- 90ml olive oil
- 60ml lemon juice
- 2 garlic cloves, minced
- Salt and pepper to taste
Steps
- Bring broth to boil in medium saucepan
- Add quinoa, reduce heat, and simmer covered 15 minutes
- Remove from heat and let stand 5 minutes
- Fluff with fork and cool completely
- Combine cucumbers, tomatoes, and onion in large bowl
- Add cooled quinoa and mix well
- Fold in feta, olives, parsley, and mint
- Whisk olive oil, lemon juice, and garlic
- Toss salad with dressing
- Season with salt and pepper
- Let stand 30 minutes before serving
Notes
Rinse quinoa before cooking to remove bitter coating. Salad keeps well refrigerated for 3 days.
