Classic Caesar Salad

Crisp romaine lettuce with creamy dressing, crunchy croutons, and Parmesan cheese.
Ingredients
- 2 large romaine hearts, chopped
- 100g Parmesan cheese, grated
- 200g day-old bread, cubed
- 60ml olive oil
- 3 garlic cloves, minced
- 4 anchovy fillets
- 30ml lemon juice
- 15ml Worcestershire sauce
- 1 egg yolk
- 5ml Dijon mustard
- Salt and pepper to taste
Steps
- Preheat oven to 200°C
- Toss bread cubes with half the olive oil and garlic
- Bake croutons for 10-12 minutes until golden
- Mash anchovies with remaining garlic to paste
- Whisk in lemon juice, Worcestershire, and mustard
- Add egg yolk and whisk vigorously
- Slowly drizzle in remaining oil while whisking
- Season dressing with salt and pepper
- Toss romaine with dressing
- Top with croutons and Parmesan
- Serve immediately
Notes
For food safety, use pasteurized eggs or omit the raw egg yolk. The dressing can be made ahead and refrigerated.
