A moist spiced cake with grated carrots, warm spices, and rich cream cheese frosting.
Ingredients
- 250g all-purpose flour
- 10g baking powder
- 5g baking soda
- 3g salt
- 5g cinnamon
- 2g nutmeg
- 1g ginger
- 300g sugar
- 240ml vegetable oil
- 4 large eggs
- 300g carrots, grated
- 100g walnuts, chopped
- 225g cream cheese, softened
- 115g butter, softened
- 400g powdered sugar
- 10ml vanilla extract
Steps
- Preheat oven to 180°C
- Grease two 23cm round pans
- Mix flour, baking powder, baking soda, salt, and spices
- Beat sugar, oil, and eggs until smooth
- Add dry ingredients to wet ingredients
- Fold in grated carrots and walnuts
- Divide batter between prepared pans
- Bake for 35 minutes until toothpick comes out clean
- Cool in pans for 10 minutes
- Turn out onto wire racks
- Cool completely
- Beat cream cheese and butter until fluffy
- Gradually add powdered sugar
- Beat in vanilla extract
- Place one layer on serving plate
- Spread frosting on top
- Add second layer
- Frost top and sides
Notes
The secret to moist carrot cake is using plenty of oil and not overbaking. Fresh grated carrots work much better than pre-shredded.
