Hearty, nutty whole wheat bread with a dense crumb and rich flavor.
Ingredients
- 350g whole wheat flour
- 150g bread flour
- 10g salt
- 7g active dry yeast
- 350ml warm water
- 30ml honey
- 30ml olive oil
- 30g sunflower seeds (optional)
Steps
- Dissolve yeast in warm water with honey
- Let stand 5 minutes until foamy
- Mix both flours and salt in large bowl
- Add yeast mixture and olive oil
- Mix until shaggy dough forms
- Knead 10 minutes until smooth and elastic
- Add sunflower seeds if using
- Place in oiled bowl and cover
- Let rise 1.5 hours until doubled
- Punch down and shape into loaf
- Place in greased 23x13cm loaf pan
- Cover and let rise 45 minutes until crested over pan
- Preheat oven to 190°C
- Bake 35-40 minutes until golden brown
- Internal temperature should reach 88°C
- Cool completely on wire rack before slicing
Notes
Whole wheat flour absorbs more liquid than white flour. Let bread cool completely for clean slicing.
