Classic Banana Bread

Moist and tender banana bread with perfectly ripe bananas and warm spices.
Ingredients
- 250g all-purpose flour
- 5g baking soda
- 3g salt
- 3g ground cinnamon
- 115g unsalted butter, melted
- 200g brown sugar, packed
- 2 large eggs
- 5ml vanilla extract
- 3 very ripe bananas, mashed
- 60ml buttermilk
- 100g walnuts, chopped (optional)
Steps
- Preheat oven to 180°C and grease 23x13cm loaf pan
- Whisk flour, baking soda, salt, and cinnamon
- Mix melted butter and brown sugar in large bowl
- Beat in eggs and vanilla extract
- Stir in mashed bananas and buttermilk
- Fold in flour mixture until just combined
- Fold in walnuts if using
- Pour batter into prepared pan
- Bake 60-65 minutes until toothpick comes out clean
- Cool in pan 10 minutes
- Turn out onto wire rack to cool completely
- Slice and serve
Notes
Use very ripe bananas with brown spots for best flavor. Don't overmix or bread will be tough.
