Ingredients
- 1000g Bread Flour
- 500g Tipo 1 (33%)
- 1125g Water (75%)
- 30g Salt (2%)
- 25g Fresh Yeast (1.7%)
Steps
- Combine flour and water in a large mixing bowl.
- Mix until no dry flour remains.
- Cover and let rest for 30 minutes.
- Add yeast to the mixture.
- Mix until ingredients are combined.
- Let mixture rest for 20 minutes.
- Add salt to the dough.
- Mix ingredients until roughly combined.
- Add remaining water gradually while mixing.
- Continue mixing until dough forms.
- Knead vigorously for 8-10 minutes until smooth and elastic.
- Place dough in an oiled bowl and cover with damp cloth.
- Let rise for 1-2 hours until doubled in size.
- Turn dough onto lightly floured surface.
- Shape dough as desired.
- Place shaped dough on baking tray and cover with damp cloth.
- Let rise for 45-60 minutes until puffy.
- Preheat oven to 220°C.
- Bake for 25-35 minutes until golden brown.
- Cool on wire rack before serving.
