Basil Sorbet

Ingredients
- Double pack of fresh Basil (~50g leaves only)
- 150g Lemon Juice
- 200g Sugar
- 100g Glucose
- 700g Water
- 1g Xanthan Gum
Steps
- Clean basil thoroughly with Baking Soda / Veg Cleaner
- Mix the lemon juice, water, sugar and glucose until dissolved
- Add basil leaves and blend until smooth
- Let sit for at least 1h
- Strain out most of the basil leave chunks
- Add xanthan gum and blend until smooth
- Churn in ice cream machine on low aeration
