Ingredients
- 1 Madagascar Vanilla Pod
- 500g Heavy Cream 38%
- 250g Whole Milk 8%
- 150g / 135g sugar (check for sugar contents % in the cream!)
- 5 Egg Yolks
- 0.3g Xanthan Gum
- 0.5g Guar Gum
Steps
- Scrape vanilla seeds and pod into milk and cream
- Heat milk and cream in pot until hot (not boiling)
- Whip sugar, gum and egg yolks until whiten
- Temper eggs with milk
- Transfer back to pot, and heat slowly until 75c or thickened
- Strain cream though fine chinois
- Cool in fridge or below 20c
- Churn in ice cream machine on medium air setting
- Freeze for at least 6 hours
- Remove from freezer 15 minutes before serving
