Coconut Ice Cream

Ingredients
- 500g Coconut Milk (green)
- 40g Sugar
- 80g Glucose
- 0.5g Guar Gum
- 0.3g Xanthan Gum
- 1g CMC
Steps
- In immersion blender cup, blend sugar, glucose and milk until dissolved
- Add stabilizers on top, and blend until smooth and silky
- Chill in fridge / below 20c
- Churn in ice cream machine on high air setting
- Freeze for at least 6 hours
- Remove from freezer 15 minutes before serving
