Ceviche Peruano

Fresh fish "cooked" in citrus juices with onions, chili, and cilantro.
Ingredients
- 600g white fish fillets (sea bass or sole), diced
- 150ml fresh lime juice
- 1 red onion, thinly sliced
- 2 ají amarillo peppers, minced
- 15g fresh ginger, grated
- 30g cilantro, chopped
- 1 sweet potato, boiled and sliced
- 200g corn kernels, cooked
- Salt and pepper to taste
- Lettuce leaves for serving
Steps
- Cut fish into 2cm cubes and place in glass bowl
- Season fish with salt and pepper
- Soak sliced onions in cold water 10 minutes, then drain
- Add lime juice to fish and mix gently
- Add ají amarillo, ginger, and half the cilantro
- Let fish "cook" in lime juice 15 minutes
- Add drained onions and remaining cilantro
- Adjust seasoning with salt
- Serve immediately with sweet potato and corn
- Garnish with lettuce leaves
Notes
Use the freshest fish possible. Don't let it marinate too long or it becomes mushy. Serve chilled.
