Ingredients
- 200g dark chocolate, chopped
- 6 large eggs, separated
- 75g sugar
- 45g butter
- 30g all-purpose flour
- 240ml milk
- 15ml vanilla extract
- 2g salt
- 30g sugar for ramekins
- 15g butter for ramekins
Steps
- Preheat oven to 190°C
- Butter six ramekins and coat with sugar
- Melt chocolate in double boiler
- Melt butter in saucepan
- Whisk in flour and cook for 1 minute
- Gradually add milk, whisking constantly
- Cook until thickened
- Remove from heat and stir in melted chocolate
- Beat in egg yolks one at a time
- Add vanilla extract
- Beat egg whites with salt until soft peaks form
- Gradually add sugar and beat until stiff peaks form
- Fold one-third of egg whites into chocolate mixture
- Gently fold in remaining egg whites
- Divide among prepared ramekins
- Bake for 12 minutes until risen and golden
- Serve immediately
