Ingredients
- 200g dark chocolate, chopped
- 6 large eggs, separated
- 75g sugar
- 300ml heavy cream
- 30ml vanilla extract
- 2g salt
- 15g cocoa powder for dusting
Steps
- Melt chocolate in double boiler until smooth
- Let chocolate cool slightly
- Whisk egg yolks with half the sugar until pale
- Slowly add melted chocolate to yolk mixture
- Add vanilla extract
- Beat egg whites with salt until soft peaks form
- Gradually add remaining sugar to egg whites
- Beat until stiff peaks form
- Whip cream until soft peaks form
- Fold one-third of egg whites into chocolate mixture
- Fold in remaining egg whites gently
- Fold in whipped cream
- Divide mixture into serving glasses
- Refrigerate for at least 3 hours
- Dust with cocoa powder before serving
