Traditional Shepherd's Pie

Traditional British casserole with seasoned lamb mince topped with creamy mashed potatoes.
Ingredients
- 700g ground lamb
- 1kg potatoes, peeled and cubed
- 2 carrots, diced
- 1 onion, diced
- 150g frozen peas
- 30ml olive oil
- 60g butter
- 60ml milk
- 30g all-purpose flour
- 250ml lamb or beef stock
- 15ml Worcestershire sauce
- 15ml tomato paste
- 5g fresh thyme
- 5g fresh rosemary, chopped
- Salt and pepper to taste
- 50g cheddar cheese, grated
Steps
- Boil potatoes in salted water until tender
- Meanwhile, heat oil in large skillet over medium-high heat
- Add onion and carrots, cook until softened
- Add lamb and cook until browned
- Sprinkle flour over meat and stir
- Add stock, Worcestershire sauce, and tomato paste
- Add herbs and simmer 15 minutes
- Stir in peas and season with salt and pepper
- Drain potatoes and mash with butter and milk
- Season mashed potatoes with salt and pepper
- Preheat oven to 200°C
- Transfer meat mixture to baking dish
- Top with mashed potatoes and sprinkle with cheese
- Bake 25 minutes until golden on top
Notes
Use ground lamb for authentic shepherd's pie. Cottage pie uses beef instead. Fork the potato topping for better browning.
