Traditional British casserole with savory lamb filling topped with creamy mashed potatoes.
Ingredients
- 800g ground lamb
- 30ml olive oil
- 1 large onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 30g tomato paste
- 250ml red wine
- 500ml beef stock
- 15g fresh thyme
- 2 bay leaves
- 1200g potatoes, peeled
- 100ml warm milk
- 60g butter
- 100g frozen peas
- Salt and pepper to taste
Steps
- Preheat oven to 190°C
- Brown lamb in olive oil in large skillet
- Remove lamb and sauté vegetables until softened
- Add tomato paste and cook 1 minute
- Return lamb to pan with wine and stock
- Add thyme and bay leaves, simmer 30 minutes
- Boil potatoes until tender, drain well
- Mash potatoes with milk and butter
- Season with salt and pepper
- Stir peas into lamb mixture
- Transfer to baking dish and top with mashed potatoes
- Bake 25-30 minutes until golden on top
- Let rest 10 minutes before serving
Notes
Traditional shepherd's pie uses lamb; cottage pie uses beef. Make sure the filling isn't too wet.
