A classic American summer dessert with fluffy biscuits, fresh strawberries, and whipped cream.
Ingredients
- 300g all-purpose flour
- 50g sugar
- 10g baking powder
- 3g salt
- 115g cold butter, cubed
- 180ml heavy cream
- 1 egg for brushing
- 500g fresh strawberries, sliced
- 75g sugar for strawberries
- 300ml heavy cream for whipping
- 30g powdered sugar
- 5ml vanilla extract
Steps
- Preheat oven to 220°C
- Mix strawberries with sugar and let macerate
- Combine flour, sugar, baking powder, and salt
- Cut in cold butter until mixture resembles coarse crumbs
- Pour in cream and stir until just combined
- Turn dough onto floured surface
- Pat into 2cm thick rectangle
- Cut into 8 squares
- Place on baking sheet
- Brush tops with beaten egg
- Bake for 15 minutes until golden
- Cool on wire rack
- Whip cream with powdered sugar and vanilla
- Split biscuits in half
- Fill with strawberries and whipped cream
- Top with more berries and cream
Notes
The key to tender biscuits is not overworking the dough and keeping the butter cold. Macerating the strawberries creates a natural syrup.
