Beef Stroganoff

Tender beef strips in a rich, creamy mushroom sauce served over egg noodles.
Ingredients
- 800g beef sirloin, cut into strips
- 400g mushrooms, sliced
- 1 onion, thinly sliced
- 3 garlic cloves, minced
- 30g all-purpose flour
- 500ml beef broth
- 250ml sour cream
- 30ml Dijon mustard
- 60ml vegetable oil
- 30g butter
- 15ml Worcestershire sauce
- 500g egg noodles
- Fresh parsley for garnish
- Salt and pepper to taste
Steps
- Season beef strips with salt and pepper
- Heat oil in large skillet over high heat
- Sear beef strips in batches until browned, set aside
- Reduce heat and add butter to same pan
- Sauté onions until softened
- Add mushrooms and cook until golden
- Add garlic and cook 1 minute
- Sprinkle flour over vegetables and stir 2 minutes
- Gradually add beef broth, whisking constantly
- Return beef to pan and simmer 10 minutes
- Stir in sour cream, mustard, and Worcestershire sauce
- Cook egg noodles according to package directions
- Serve stroganoff over noodles, garnished with parsley
Notes
Don't let sauce boil after adding sour cream or it will curdle. Serve immediately for best texture.
