Light and fluffy pancakes with tangy buttermilk and a tender crumb.
Ingredients
- 250g all-purpose flour
- 30g granulated sugar
- 10g baking powder
- 5g salt
- 500ml buttermilk
- 2 large eggs
- 60g melted butter
- 5ml vanilla extract
- Butter for cooking
- Maple syrup for serving
Steps
- Whisk flour, sugar, baking powder, and salt in large bowl
- Beat buttermilk, eggs, melted butter, and vanilla in separate bowl
- Pour wet ingredients into dry ingredients
- Stir just until combined, leaving lumps
- Heat griddle or skillet over medium heat
- Brush with butter
- Pour 60ml batter per pancake onto hot griddle
- Cook until bubbles form on surface
- Flip and cook until golden brown
- Serve immediately with butter and syrup
Notes
Don't overmix the batter or pancakes will be tough. Keep cooked pancakes warm in 100°C oven.
