Rich chocolate cakes with molten centers that flow like lava when cut open.
Ingredients
- 100g dark chocolate, chopped
- 100g unsalted butter
- 2 large eggs
- 2 egg yolks
- 60g granulated sugar
- 30g all-purpose flour
- Pinch of salt
- Butter for ramekins
- Cocoa powder for dusting
- Vanilla ice cream for serving
Steps
- Preheat oven to 220°C
- Butter four 150ml ramekins and dust with cocoa powder
- Melt chocolate and butter in double boiler until smooth
- Whisk whole eggs, egg yolks, and sugar until thick
- Fold melted chocolate mixture into egg mixture
- Sift in flour and salt, fold until just combined
- Divide batter among prepared ramekins
- Bake for 12-14 minutes until edges are firm but centers jiggle
- Let cool for 1 minute
- Run knife around edges and invert onto plates
- Serve immediately with vanilla ice cream

The timing is crucial - underbake slightly for molten centers. Can be made ahead and refrigerated before baking.
