Crispy breaded chicken cutlets topped with marinara sauce and melted cheese.
Ingredients
- 4 chicken breasts, pounded thin
- 200g all-purpose flour
- 3 eggs, beaten
- 300g panko breadcrumbs
- 150g Parmesan cheese, grated
- 500ml marinara sauce
- 300g mozzarella cheese, shredded
- 120ml olive oil
- 15g fresh basil, chopped
- Salt and pepper to taste
- Pasta for serving
Steps
- Season chicken with salt and pepper
- Set up breading station with flour, beaten eggs, and panko mixed with half the Parmesan
- Dredge chicken in flour, then egg, then breadcrumb mixture
- Heat olive oil in large skillet over medium-high heat
- Cook chicken cutlets 4-5 minutes per side until golden
- Transfer to baking dish and top with marinara sauce
- Sprinkle with mozzarella and remaining Parmesan
- Bake at 200°C for 15 minutes until cheese is bubbly
- Let rest 5 minutes before serving
- Garnish with fresh basil
- Serve over pasta with extra marinara sauce
Notes
Pound chicken to even thickness for uniform cooking. Don't overcrowd the pan when frying.
