Baked Chicken Parmesan

Breaded chicken cutlets topped with marinara sauce and melted mozzarella cheese.
Ingredients
- 4 chicken breasts, pounded thin
- 150g all-purpose flour
- 3 large eggs, beaten
- 200g breadcrumbs
- 100g Parmesan cheese, grated
- 500ml marinara sauce
- 200g mozzarella cheese, shredded
- 60ml olive oil
- 30g fresh basil, chopped
- Salt and pepper to taste
- 400g spaghetti
Steps
- Preheat oven to 200°C
- Season chicken with salt and pepper
- Set up breading station with flour, eggs, and breadcrumbs mixed with Parmesan
- Dredge chicken in flour, then egg, then breadcrumb mixture
- Heat oil in large oven-safe skillet over medium heat
- Cook chicken 3-4 minutes per side until golden
- Spoon marinara sauce over each piece
- Top with mozzarella cheese
- Transfer skillet to oven and bake 15 minutes
- Cook spaghetti according to package directions
- Remove chicken from oven when cheese is bubbly
- Let rest 5 minutes before serving
- Serve over spaghetti and garnish with basil
Notes
Pound chicken to even thickness for uniform cooking. Use panko breadcrumbs for extra crispiness.
