Rich pork bone broth with tender chashu, soft-boiled eggs, and fresh noodles.
Ingredients
- 1kg pork bones
- 500g pork belly
- 4 portions fresh ramen noodles
- 4 eggs
- 2 green onions, sliced
- 100g bamboo shoots
- 4 sheets nori
- 30ml soy sauce
- 15ml miso paste
- 30ml sake
- 15ml sesame oil
- 2 garlic cloves, minced
- 15g fresh ginger, sliced
- Salt to taste
Steps
- Blanch pork bones in boiling water for 10 minutes
- Rinse bones and place in clean pot with water
- Simmer bones for 3-4 hours until broth is milky
- Braise pork belly in soy sauce, sake, and ginger for 2 hours
- Slice pork belly into chashu pieces
- Soft-boil eggs for 6 minutes, marinate in soy sauce
- Strain broth and season with miso and salt
- Cook noodles according to package directions
- Heat bowls and add seasoning base
- Ladle hot broth over noodles
- Top with chashu, egg, bamboo shoots, and nori
- Garnish with green onions and serve immediately
Notes
The broth requires long cooking for richness. Many components can be prepared ahead and assembled quickly.
