Elegant Italian dessert with coffee-soaked ladyfingers and creamy mascarpone layers.
Ingredients
- 300g ladyfinger cookies
- 500ml strong espresso, cooled
- 60ml coffee liqueur (optional)
- 6 large egg yolks
- 150g granulated sugar
- 500g mascarpone cheese
- 3 egg whites
- Pinch of salt
- Unsweetened cocoa powder for dusting
- Dark chocolate shavings for garnish
Steps
- Combine espresso and coffee liqueur in shallow dish
- Whisk egg yolks and sugar until thick and pale
- Beat in mascarpone until smooth
- Whip egg whites with salt to soft peaks
- Fold whites into mascarpone mixture
- Quickly dip ladyfingers in coffee mixture
- Arrange in single layer in 23x33cm dish
- Spread half the mascarpone mixture over cookies
- Repeat with remaining cookies and mascarpone
- Cover and refrigerate at least 4 hours
- Dust with cocoa powder before serving
- Garnish with chocolate shavings
Notes
Use room temperature mascarpone for easier mixing. The dessert improves overnight in the refrigerator.
