Banoffee Pie

A British creation combining digestive biscuit base, toffee, bananas, and whipped cream.
Ingredients
- 300g digestive biscuits, crushed
- 150g butter, melted
- 400g sweetened condensed milk
- 100g butter
- 100g brown sugar
- 3 large ripe bananas
- 300ml heavy cream
- 30g powdered sugar
- 5ml vanilla extract
- 15g cocoa powder for dusting
Steps
- Mix crushed biscuits with melted butter
- Press mixture into 23cm pie pan
- Refrigerate crust for 30 minutes
- Make toffee by heating condensed milk, butter, and brown sugar
- Stir constantly until thick and golden
- Pour toffee over biscuit base
- Cool to room temperature
- Slice bananas and arrange over toffee
- Whip cream with powdered sugar and vanilla
- Spread whipped cream over bananas
- Dust with cocoa powder
- Refrigerate for at least 3 hours
- Serve chilled
Notes
This indulgent British dessert was invented in the 1970s. The key is making the toffee thick enough to hold its shape but not so thick it becomes hard.
