Crispy Spanish fried pastries dusted with cinnamon sugar and served with rich chocolate sauce.
Ingredients
- 240ml water
- 85g butter
- 15g sugar
- 2g salt
- 125g all-purpose flour
- 3 large eggs
- 1000ml vegetable oil for frying
- 100g sugar for coating
- 5g cinnamon for coating
- 200g dark chocolate, chopped
- 200ml heavy cream
Steps
- Heat water, butter, sugar, and salt in saucepan
- Bring to boil and remove from heat
- Add flour all at once and stir vigorously
- Return to heat and cook for 1 minute, stirring constantly
- Transfer to bowl and cool for 5 minutes
- Beat in eggs one at a time until smooth
- Heat oil to 180°C in deep pot
- Transfer dough to piping bag with star tip
- Pipe 10cm lengths directly into hot oil
- Fry until golden brown on all sides
- Remove and drain on paper towels
- Mix sugar and cinnamon for coating
- Roll warm churros in cinnamon sugar
- Heat cream in saucepan until steaming
- Pour over chopped chocolate and whisk until smooth
- Serve churros warm with chocolate sauce
Notes
The key to perfect churros is maintaining the oil temperature and serving them immediately while crispy. The choux pastry base creates the ideal texture.
