Ingredients
- 500ml heavy cream
- 6 large egg yolks
- 75g sugar
- 5ml vanilla extract
- 1g salt
- 60g sugar for caramelizing
Steps
- Preheat oven to 160°C
- Heat cream in saucepan until almost boiling
- Whisk egg yolks with sugar until pale
- Add vanilla extract and salt
- Slowly pour hot cream into egg mixture while whisking
- Strain mixture through fine mesh sieve
- Divide among six ramekins
- Place ramekins in baking dish
- Pour hot water halfway up sides of ramekins
- Bake for 40 minutes until just set
- Remove from water bath
- Cool to room temperature
- Refrigerate for at least 4 hours
- Just before serving, sprinkle sugar on top
- Caramelize sugar with kitchen torch
- Serve immediately
