Ingredients
- 500ml heavy cream
- 75g sugar
- 7g unflavored gelatin
- 60ml warm water
- 10ml vanilla extract
- 200g mixed berries for serving
- 30ml honey for berries
Steps
- Sprinkle gelatin over warm water
- Let bloom for 5 minutes
- Heat cream and sugar in saucepan
- Stir until sugar dissolves
- Remove from heat
- Add bloomed gelatin and stir until dissolved
- Stir in vanilla extract
- Strain mixture through fine mesh sieve
- Divide among six ramekins
- Cover with plastic wrap
- Refrigerate for at least 3 hours
- Mix berries with honey
- Run knife around edges of ramekins
- Dip bottoms in warm water briefly
- Invert onto serving plates
- Serve with honeyed berries
