A moist British dessert cake studded with dates and drenched in rich toffee sauce.
Ingredients
- 200g dates, pitted and chopped
- 250ml boiling water
- 5g baking soda
- 85g butter, softened
- 150g brown sugar
- 2 large eggs
- 175g self-raising flour
- 200g brown sugar for sauce
- 200ml heavy cream
- 85g butter for sauce
- 2g salt
Steps
- Preheat oven to 180°C
- Place dates in bowl and pour over boiling water
- Stir in baking soda and let cool
- Cream butter and sugar until light and fluffy
- Beat in eggs one at a time
- Fold in flour alternately with date mixture
- Pour into greased baking dish
- Bake for 35 minutes until golden and springy
- Meanwhile, make sauce by heating brown sugar, cream, and butter
- Stir until sugar dissolves and sauce thickens
- Add salt to sauce
- Poke holes all over warm cake with skewer
- Pour half the sauce over cake
- Let absorb for 10 minutes
- Serve with remaining warm sauce
