Crispy beer-battered fish with tangy slaw and creamy sauce in warm tortillas.
Ingredients
- 600g white fish fillets, cut into strips
- 150g all-purpose flour
- 5g baking powder
- 3g salt
- 250ml cold beer
- 8 corn tortillas
- 200g cabbage, shredded thin
- 1 carrot, julienned
- 60ml lime juice
- 30ml mayonnaise
- 15ml sour cream
- 1 jalapeño, minced
- 30g cilantro, chopped
- Oil for frying
- Lime wedges for serving
Steps
- Heat oil to 180°C in deep pot
- Mix flour, baking powder, and salt
- Whisk in cold beer until smooth batter forms
- Combine cabbage, carrot, and half the lime juice
- Mix mayonnaise, sour cream, jalapeño, and cilantro for sauce
- Dip fish in batter and fry until golden and crispy
- Drain on paper towels
- Warm tortillas in dry skillet
- Fill tortillas with fish, slaw, and sauce
- Garnish with remaining cilantro
- Serve with lime wedges
Notes
Keep the beer batter cold for crispiest results. Any firm white fish works well for this recipe.
