Hearty beef and bean chili with rich, complex flavors and a hint of heat.
Ingredients
- 700g ground beef
- 400g kidney beans, drained
- 400g diced tomatoes
- 250ml tomato sauce
- 1 large onion, diced
- 1 bell pepper, diced
- 4 garlic cloves, minced
- 30ml olive oil
- 500ml beef broth
- 30g chili powder
- 10g ground cumin
- 5g paprika
- 3g oregano
- 2g cayenne pepper
- 5g salt
- 2g black pepper
- 30g dark chocolate, chopped
- Sour cream for serving
- Shredded cheese for serving
- Green onions for garnish
Steps
- Heat oil in large Dutch oven over medium-high heat
- Add onion and bell pepper, cook until softened
- Add garlic and cook 30 seconds
- Add ground beef and cook until browned
- Drain excess fat
- Add all spices and stir for 1 minute
- Add tomatoes, tomato sauce, and broth
- Bring to boil, then reduce heat and simmer covered 1 hour
- Add kidney beans and continue simmering 30 minutes
- Stir in chocolate until melted
- Season with salt and pepper to taste
- Serve hot with sour cream and cheese
- Garnish with green onions
Notes
The chocolate adds depth without sweetness. Let chili rest overnight for even better flavor development.
