Traditional double-crust apple pie with tender apples and warm spices.
Ingredients
- 500g all-purpose flour
- 3g salt
- 340g cold butter, cubed
- 90ml ice water
- 1200g apples, peeled and sliced
- 150g granulated sugar
- 30g all-purpose flour
- 5g ground cinnamon
- 2g ground nutmeg
- 30ml lemon juice
- 30g butter, diced
- 1 egg, beaten
Steps
- Mix flour and salt in large bowl
- Cut in cold butter until mixture resembles coarse crumbs
- Gradually add ice water until dough comes together
- Divide dough in half, wrap, and chill 1 hour
- Mix apples with sugar, flour, spices, and lemon juice
- Roll out bottom crust and place in pie pan
- Fill with apple mixture and dot with butter
- Roll out top crust and place over filling
- Trim and crimp edges to seal
- Cut vents in top crust and brush with beaten egg
- Bake at 220°C for 15 minutes
- Reduce to 190°C and bake 35-40 minutes until golden
- Cool completely before slicing
Notes
Use a mix of apple varieties for best flavor and texture. Serve with vanilla ice cream or whipped cream.
