Grilled spiced chicken in a rich, creamy tomato-based sauce, a British-Indian restaurant favorite.
Ingredients
- 1kg chicken breast, cut into chunks
- 200ml plain yogurt
- 15ml lemon juice
- 10g garam masala
- 5g paprika
- 3 garlic cloves, minced
- 15g fresh ginger, grated
- 60ml vegetable oil
- 1 large onion, chopped
- 800g canned tomatoes, crushed
- 250ml heavy cream
- 30g tomato paste
- 15g butter
- 10g ground cumin
- 5g ground coriander
- 3g turmeric
- Fresh cilantro for garnish
- Basmati rice for serving
- Salt to taste
Steps
- Marinate chicken with yogurt, lemon juice, half the garam masala, paprika, garlic, and ginger for 2 hours
- Thread chicken onto skewers and grill until charred and cooked through
- Heat oil in large pan and sauté onions until golden
- Add remaining garlic, ginger, and spices, cook 1 minute
- Add tomato paste and cook 2 minutes
- Pour in crushed tomatoes and simmer 15 minutes
- Blend sauce until smooth and return to pan
- Add grilled chicken and simmer 10 minutes
- Stir in cream and butter
- Adjust seasoning with salt and garam masala
- Garnish with cilantro and serve with basmati rice
Notes
The chicken benefits from being slightly charred. Don't let sauce boil after adding cream or it may curdle.
