A tangy and creamy Florida classic with tart key lime filling in a graham cracker crust.
Ingredients
- 200g graham crackers, crushed
- 85g butter, melted
- 50g sugar
- 400ml sweetened condensed milk
- 120ml key lime juice
- 15g key lime zest
- 3 large egg yolks
- 240ml heavy cream
- 30g powdered sugar
Steps
- Preheat oven to 175°C
- Mix crushed graham crackers, melted butter, and sugar
- Press mixture into 23cm pie pan
- Bake crust for 12 minutes
- Cool completely
- Whisk egg yolks until smooth
- Add condensed milk and mix well
- Stir in key lime juice and zest
- Pour filling into cooled crust
- Bake for 15 minutes until set
- Cool to room temperature
- Refrigerate for at least 3 hours
- Whip cream with powdered sugar
- Spread whipped cream over pie
- Garnish with lime zest
- Serve chilled
Notes
Authentic key lime pie uses key limes, which are smaller and more tart than regular limes. If unavailable, regular lime juice works as a substitute.
