New York Style Cheesecake

Rich and creamy New York-style cheesecake with graham cracker crust.
Ingredients
- 200g graham crackers, crushed
- 60g granulated sugar
- 85g melted butter
- 900g cream cheese, room temperature
- 250g granulated sugar
- 4 large eggs
- 250ml sour cream
- 10ml vanilla extract
- 30g all-purpose flour
- Pinch of salt
Steps
- Preheat oven to 180°C and wrap 23cm springform pan in foil
- Mix graham cracker crumbs, 60g sugar, and melted butter
- Press mixture into bottom of prepared pan
- Bake crust 10 minutes, then cool
- Beat cream cheese until smooth and fluffy
- Gradually add 250g sugar, beating until combined
- Beat in eggs one at a time
- Mix in sour cream, vanilla, flour, and salt
- Pour filling over crust
- Bake in water bath for 50-60 minutes until center barely jiggles
- Turn off oven and crack door, cool 1 hour
- Refrigerate at least 4 hours before serving
- Run knife around edge before removing sides
Notes
All ingredients should be at room temperature for smooth mixing. Water bath prevents cracking.
