The ultimate creamy and dense New York-style cheesecake with a graham cracker crust.
Ingredients
- 200g graham crackers, crushed
- 85g butter, melted
- 50g sugar
- 900g cream cheese, softened
- 200g sugar
- 4 large eggs
- 240ml sour cream
- 15ml vanilla extract
- 15g all-purpose flour
- 2g salt
Steps
- Preheat oven to 160°C
- Mix crushed graham crackers, melted butter, and sugar
- Press mixture into bottom of 23cm springform pan
- Bake crust for 12 minutes
- Cool completely
- Beat cream cheese until smooth and fluffy
- Gradually add sugar and beat well
- Add eggs one at a time, beating after each
- Mix in sour cream, vanilla, flour, and salt
- Pour filling over crust
- Smooth top with spatula
- Bake for 60 minutes until center is almost set
- Turn off oven and crack door open
- Let cool in oven for 1 hour
- Remove and cool completely
- Refrigerate for at least 6 hours
- Run knife around edges before removing pan sides
Notes
The key to preventing cracks is gradual cooling and not overbaking. The cheesecake should still jiggle slightly in the center when done.
