Homestyle Chicken Noodle Soup

Classic homestyle chicken noodle soup with tender vegetables and hearty egg noodles.
Ingredients
- 500g boneless chicken thighs
- 200g egg noodles
- 2L chicken stock
- 2 carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 30ml olive oil
- 15ml fresh thyme
- 2 bay leaves
- 30g fresh parsley, chopped
- Salt and pepper to taste
Steps
- Heat oil in large pot over medium heat
- Season chicken with salt and pepper
- Brown chicken on both sides and remove
- Add onion, carrots, and celery to same pot
- Cook vegetables until softened
- Add garlic and cook 30 seconds
- Return chicken to pot with stock
- Add thyme and bay leaves
- Bring to boil, then reduce heat and simmer 25 minutes
- Remove chicken and shred when cool enough to handle
- Bring soup back to boil and add noodles
- Cook noodles according to package directions
- Return shredded chicken to pot and season with salt and pepper
- Remove bay leaves and garnish with parsley
Notes
Use chicken thighs for more flavor and moisture. Add noodles at the end to prevent them from getting mushy.
