Ingredients
- 200g dark chocolate, chopped
- 115g butter
- 2 large eggs
- 2 large egg yolks
- 60g sugar
- 30g all-purpose flour
- 1g salt
- 15g butter for ramekins
- 15g cocoa powder for dusting
Steps
- Preheat oven to 220°C
- Butter six ramekins and dust with cocoa powder
- Melt chocolate and butter in double boiler
- Whisk until smooth and let cool slightly
- Beat whole eggs, egg yolks, and sugar until thick
- Fold in melted chocolate mixture
- Sift in flour and salt
- Fold gently until just combined
- Divide batter among prepared ramekins
- Bake for 12 minutes until edges are firm but centers jiggle
- Let rest for 1 minute
- Run knife around edges
- Invert onto serving plates
- Serve immediately
Notes
Timing is crucial - the cakes should be just set around the edges with liquid centers. Serve immediately while the chocolate center is still molten.
