Classic American muffins bursting with fresh blueberries and topped with a golden dome.
Ingredients
- 250g all-purpose flour
- 100g sugar
- 10g baking powder
- 3g salt
- 85g butter, melted
- 240ml milk
- 1 large egg
- 5ml vanilla extract
- 200g fresh blueberries
- 15g sugar for topping
Steps
- Preheat oven to 200°C
- Line muffin tin with paper liners
- Mix flour, sugar, baking powder, and salt
- Toss blueberries with small amount of flour mixture
- Whisk melted butter, milk, egg, and vanilla
- Add wet ingredients to dry ingredients
- Fold gently until just combined
- Fold in floured blueberries
- Divide batter among muffin cups
- Sprinkle tops with remaining sugar
- Bake for 20 minutes until golden brown
- Test with toothpick for doneness
- Cool in pan for 5 minutes
- Turn out onto wire rack
Notes
The secret to tender muffins is minimal mixing - the batter should look lumpy. Tossing blueberries in flour prevents them from sinking to the bottom.
