Traditional Filipino braised chicken in vinegar and soy sauce with garlic and bay leaves.
Ingredients
- 1.5kg chicken pieces (thighs and drumsticks)
- 120ml white vinegar
- 120ml soy sauce
- 8 garlic cloves, crushed
- 2 bay leaves
- 10g black peppercorns
- 30ml vegetable oil
- 1 onion, sliced
- 250ml water
- 15g brown sugar
- Steamed rice for serving
Steps
- Marinate chicken with vinegar, soy sauce, garlic, bay leaves, and peppercorns for 30 minutes
- Remove chicken from marinade, reserve marinade
- Heat oil in large pot and brown chicken pieces
- Add onions and cook until softened
- Pour in reserved marinade and water
- Bring to boil, then reduce heat and simmer covered 30 minutes
- Remove lid and add brown sugar
- Simmer uncovered until sauce reduces and chicken is tender
- Adjust seasoning with more vinegar or soy sauce if needed
- Serve hot over steamed rice
Notes
Don't stir while simmering to prevent breaking up the chicken. The sauce should be tangy and slightly sweet.
