Yogurt-marinated chicken with aromatic spices, traditionally cooked in a tandoor oven.
Ingredients
- 1 whole chicken, cut into pieces
- 250ml plain yogurt
- 30ml lemon juice
- 15g garlic paste
- 15g ginger paste
- 10g tandoori masala
- 5g paprika
- 5g cumin powder
- 5g coriander powder
- 3g turmeric
- 3g cayenne pepper
- 60ml vegetable oil
- Red food coloring (optional)
- Fresh mint for garnish
- Naan bread for serving
- Basmati rice for serving
- Salt to taste
Steps
- Make deep cuts in chicken pieces to allow marinade penetration
- Mix yogurt with lemon juice, garlic, ginger, and all spices
- Add food coloring if using for traditional red color
- Marinate chicken in mixture for at least 6 hours
- Preheat oven to 240°C or prepare grill
- Remove chicken from marinade and brush with oil
- Cook in oven 25-30 minutes or grill over high heat
- Turn halfway through cooking until charred and cooked through
- Let rest 5 minutes before serving
- Garnish with fresh mint
- Serve with naan bread and basmati rice
Notes
Longer marinating time develops deeper flavors. Use a meat thermometer to ensure proper doneness.
