Moist, slightly sweet cornbread with a golden crust and tender crumb.
Ingredients
- 200g yellow cornmeal
- 150g all-purpose flour
- 50g granulated sugar
- 15g baking powder
- 8g salt
- 250ml buttermilk
- 2 large eggs
- 80ml melted butter
- 30ml vegetable oil
Steps
- Preheat oven to 200°C
- Grease 20cm square baking pan
- Whisk cornmeal, flour, sugar, baking powder, and salt in large bowl
- Beat buttermilk, eggs, and melted butter in separate bowl
- Pour wet ingredients into dry ingredients
- Stir just until combined, don't overmix
- Heat oil in the baking pan in oven 5 minutes
- Carefully pour batter into hot oiled pan
- Bake 20-25 minutes until golden brown
- Test with toothpick inserted in center
- Cool in pan 10 minutes before cutting
- Cut into squares and serve warm
Notes
The hot oil creates a crispy crust. Don't overmix or cornbread will be tough. Serve with honey butter or jam.
