French Onion Soup

Rich beef broth with caramelized onions topped with melted Gruyère cheese and crusty bread.
Ingredients
- 6 large yellow onions, thinly sliced
- 60g butter
- 30ml olive oil
- 5g sugar
- 3g salt
- 125ml dry white wine
- 1.5L beef stock
- 15ml fresh thyme leaves
- 2 bay leaves
- Salt and pepper to taste
- 6 thick slices French bread
- 200g Gruyère cheese, grated
- 30g Parmesan cheese, grated
Steps
- Heat butter and oil in large heavy pot over medium heat
- Add onions, sugar, and salt
- Cook onions slowly for 45-60 minutes, stirring occasionally
- Continue until onions are deep golden brown and caramelized
- Add wine and scrape up browned bits from bottom
- Add stock, thyme, and bay leaves
- Bring to boil, then reduce heat and simmer 30 minutes
- Season with salt and pepper
- Preheat broiler and toast bread slices
- Ladle soup into oven-safe crocks
- Float bread slice on top of each serving
- Sprinkle generously with both cheeses
- Broil until cheese is bubbly and golden
Notes
Patience is key for properly caramelized onions. Don't rush the process or they'll burn instead of caramelize.
